Lahmacun

Lahmacun is a very thin round flatbread spread with minced meat, tomato, pepper, herbs and spices before being baked quickly in a hot oven. It should be crisp at the rim but flexible enough to roll with parsley, onion, lemon or salad.
Why locals eat it
Although found throughout Türkiye and neighboring regions, lahmacun is a standard fast meal in Istanbul’s bakeries and kebab restaurants. It is lighter and thinner than thick-crust pizza, and the toppings are baked into the bread rather than added afterward.
Local tip
Squeeze lemon over it, add herbs and roll it while warm. Ask whether the topping is spicy, and order one per person before deciding if you need another.
