Khao Man Gai

Khao man gai is poached chicken served over rice cooked with chicken fat, stock and aromatics, alongside cucumber, broth and a fermented-soybean chilli sauce. The chicken is tender and mild, while the sauce supplies salt, heat and acidity.
Why locals eat it
The dish is part of Bangkok’s Chinese-Thai rice-plate tradition and is commonly eaten as a quick, complete meal. It resembles Hainanese chicken rice but has its own Thai sauce and stall culture, so the condiment is central rather than optional.

Taste the rice and chicken before adding sauce, then mix a little at a time. Ask for dark meat or breast if available, and use the broth and cucumber to refresh the palate.
