Som tam is a green papaya salad made to order in a mortar, where garlic, chilli, lime juice, fish sauce and palm sugar are pounded into a sharp dressing before shredded papaya is folded through. Tomatoes, long beans and roasted peanuts add freshness and crunch; dried shrimp or salted crab may deepen the savory flavor. It is bright, hot and intentionally assertive rather than a mild side salad.
Why locals eat it
Although versions of green papaya salad are found across mainland Southeast Asia, som tam became a familiar part of Bangkok’s everyday food through migration and the city’s northeastern Thai communities. The dish is valued for its quick preparation and adjustable balance: the same mortar can produce a sweeter, milder salad or one driven by chilli, fermented crab and salty depth.

Tell the vendor your preferred spice level before the pounding starts. Ask whether the version contains fermented crab or dried shrimp if you have allergies, and order sticky rice or grilled chicken alongside it to soften the heat.
